In this episode of ITK Eats, we show you how to make your food its best and turn it into an easy weeknight dinner. This cooked onion pasta recipe is inspired by the classic French onion soup, with tender spaghetti noodles and a delicious creamy sauce mixed in, then topped with crunchy breadcrumbs. We make this recipe bowl in an enameled cast-iron casserole dish, and because it’s oven-safe, you won’t have to change dishes to grill it.
Cooking for vegetarians? Simply replace the beef broth with vegetable broth.

2 tablespoons of butter

2 medium onions, thinly sliced

2 tablespoons of sherry

Half a cup of dry white wine

5 sprigs of fresh thyme

8 ounces uncooked rigatoni

1 teaspoon Worcester sauce

3 cups broth or beef broth

Half a cup of heavy cream
-
1 cup grated cheese
-
A quarter cup of grated Parmesan cheese

Salt and black pepper to season

1. Melt the butter over medium heat, then add the onions, season with a pinch of salt and sauté over medium heat for 5 minutes. Then reduce the heat to medium-low and simmer for 30-45 minutes.
2. Add the sherry, dry white wine, thyme, pinch of salt, pinch of black pepper, pasta, Worcester sauce and broth and bring to a boil. Cook until the pasta is al dente.
3. Remove the thyme sprigs and mix with the heavy cream, Gruyere and Parmesan.
4. To prepare the filling, combine the Parmesan cheese, bread crumbs and olive oil in a separate bowl. Sprinkle this mixture over the pasta. Roast for a few minutes until golden brown.
